I am working on the low/no refined-sugar versions… still yummy!

1. chocolate-chip standard

4 ounces (115 g) butter, room temperature; unsalted preferred, but salted is fine.
2/3 cup (110 g) dark brown sugar
1/2 cup (100 g) granulated white sugar
1 egg
1/2 tsp vanilla
1 1/3 cups (200 g) flour
1/2 tsp baking soda
1 1/3 cup (200 g) chocolate chips/pieces/chunks
1 cup toasted walnuts (or pecans)

– beat butter and sugars until whipped; 3-5 minutes
– beat in egg and vanilla
– whisk dry ingredients in a separate bowl
– add butter/sugar/egg mix to flour mix
– not required, but cookies get better if the dough is left in the refrigerator overnight
– bake nice-sized dough blobs until browned at 350 F (180 C)

notes: recipe yields ~20 cookies, but is easily doubled. baking on parchment paper and/or with a silicon baking mat or cookie-friendly baking sheet makes a surprisingly big difference.
